The farm
Ngacha Estate sits in Kirinyaga, under Mount Kenya, on deep red volcanic soil. Martin Muriuki runs the farm and the wet mill himself, which is rare here.
Because he controls both, he can run the same day's cherry through four different processes and keep them separate. That is why we buy all four.
Yellow honey is the most transparent of them. It reads like a very clean Kenyan with the edges rounded off.
The process
Yellow Honey
Most of the mucilage is removed at the pulper and the seed dries with a thin yellow layer still attached. Fast drying, high airflow, the lightest touch of the three honeys.
